I absolutely love dairy!🥛🧀 I think that they are one of the most delicious foods out there and I love the sheer variety of meals that can be made from them, ranging from sweet to salty and savoury. Milk, yoghurt, cottage cheese, quark, Greek cheese, Parmesan ripened Gauda, Saint Agur (my favourite cheese), Gorgonzola Ricotta, Creme Fraiche, Kisla Smetana, Mascarpone, Parmesan, Butter and fresh cheese and many more. It is an incredibly nutricious source, but the most attractive dairy products are almost all fermented. These include cheeses, kefir and yoghurts. These contain less lactose, often have the most unique tastes, more nutrients produced by the microbic cultures in them, which seem to have positive health effects. Dairy unfortunately is not for everyone, some people have severe lactose intolerance or casein allergies, but I’m lucky not to have them and I rejoice in my luck.

There’s nothing like quark or skyr with chia seeds and berries, ricotta with a banana and yoghurt after exercise, a simple almond, quark and egg cheesecake, tiramisu from mascarpone, eggs, berries and raw cocoa, the incredibly delicious Saint Agur sauce (it’s hard to make because I almost always eat the cheese before making the sauce), Greek salads with Greek cheese, Parmesan on Bolognese sauce, and of course warm kefir with raw cocoa. And I can’t wait to try out many more recipes. I for example haven’t yet tried out Fondue! 🫕
